PLANKED SALMON WITH BASIL CREAM SAUCE
Ingredients
2-4 SALMON STEAKS
BASIL CREAM SAUCE
2 TBS – MELTED REAL BUTTER
1 TBS – CHOPPED GREEN ONION
½ CUP – DRY WHITE WINE
1 CUP – HEAVY CREAM
2 TBS – CHOPPED BASIL
SALT AND PEPPER TO TASTE

BRUSH GRILL GRATES WITH OIL TO PREVENT STICKING AND PREHEAT AT MEDIUM TEMPERATURE (APPROX 325 DEGREES F). PLACE SALMON ON GRILL, SKIN SIDE UP, FOR 1 MINUTE (JUST LONG ENOUGH TO GET NICE SEAR MARK) WITH LID OPEN. TURN OVER, PLACE SKIN SIDE DOWN AND CONTINUE COOKING UNTIL SKIN IS DRY.
USING THIN SPATULA, SEPARATE MEAT FROM SKIN AND PLACE ON MEAT ON PRE-MOISTENED CEDAR PLANK AWAY FROM DIRECT HEAT. COOK FOR ANOTHER 10 MINUTES WITH LID DOWN AND SERVE HOT WITH LEMON WEDGES AND ROOM TEMPERATURE BASIL CREAM SAUCE.
Basil Cream Sauce
OVER MEDIUM HEAT, COMBINE BASIL, ONION AND BUTTER FOR 2-3 MINUTES. ADD WINE AND SIMMER APPROX. 10 MINUTES. ADD CREAM, BASIL, SALT AND PEPPER AND SIMMER ADDITIONAL 10 MINUTES. SERVE AT ROOM TEMPERATURE OVER FISH.
