4 C. Bread Flour (1 lb, 2 oz)
1 Tbsp. Salt Substitute
4 Tbsp. Sugar
1 Tbsp. Active Yeast
2 Tbsp. Extra Virgin Olive Oil
3/4 C. Low Fat Cultured Buttermilk
1/2 C. Water
Mix 3/4 C. Low Fat Cultured Buttermilk with 1/2 C. Water. Heat in microwave for 15-30 seconds to a temperature of 75-85°, then pour into the bread case, adding 2 Tbsp. Extra Virgin Olive Oil. Combine all remaining ingredients, whisk together and add to bread case. Select Basic cycle, and start. Bake according to bread machine manufacturer’s directions. When bread baking cycle is complete, remove bread to a wire rack to cool, prior to slicing. Do NOT use timer-delayed start for this recipe.
For cold sandwiches, use the day you bake the bread. Freeze any leftover bread. A great part of a reduced-sodium diet.
Makes 12-14 half slices. Enjoy!
