Southern Delight® Dad’s Favorite—Grandma Baxter’s Chess Pie
Ingredients
1.5 C. Sugar
1 Stick ( or 1/2 lb) Butter (softened)
4 tsp. Cornmeal
1 Tbsp. White Vinegar
1/2 tsp. Vanilla Extract
3 Eggs (beaten)
Directions
Preheat oven to 350°. Combine Sugar, Butter, Cornmeal, White Vinegar and Vanilla Extract in mixer bowl and blend well. Beat eggs with wire whisk and add, mixing until well blended. Pour into unbaked 9” pie shell and bake on center rack at 350° for 35-50 min, until slightly browned and well-set. Cool on wire race before slicing.
If using glass pie plate, reduce oven temperature to 325° Makes 8 slices. My Grandma Baxter’s chess pie was always my Dad’s favorite pie.
