2 medium cucumbers, peeled and sliced thin
1 small onion, sliced
½cup apple cider vinegar
2 tablespoons sugar
2 tablespoons parsley, chopped
1 green pepper, chopped
1 to 11/2 teaspoons salt
¼ teaspoon black pepper
Mix cucumbers, onion, and green pepper.
Mix vinegar, water, sugar, parsley, salt and pepper and pour over the vegetable mixture.
Chill thoroughly, at least 2 hours before serv¬ing. The mixture will keep several days in the refrigerator.
Makes 8 servings.
Recipe variation: drain marinated vegetables and mix with sour cream or plain yogurt.
