6 Ripe Bananas (peeled and cut in half)
4 Tbsp. Butter
4 tsp. All Purpose Flour
4 Tbsp. Sugar
2 tsp. Ground Mustard
2 Eggs, well beaten
6 Tbsp. White Vinegar
2 C. Chopped Peanuts
6 Lettuce Leaves
Prepare salad dressing before peeling bananas.
Melt Butter in sauce pan over medium heat.
Mix Flour, Sugar and Ground Mustard and whisk into melted butter, whisking continuously.
Add vinegar and eggs, while whisking continuously, cooking until dressing thickens, then remove from heat.
Slice bananas cross-wise across middle and roll in dressing, and then in peanuts.
To serve, place two banana halves on lettuce leaf.
Serves 6. Enjoy.
