Wild Bird and Nature Store Peach Cobbler
6 fresh peaches peeled and sliced, smush up (southern word) one peach for juice.
1/2 cup brown sugar
1 teaspoon cinnamon
1 cup all-purpose flour
1/4 cup sugar
1 tablespoon corn starch
1/2 teaspoon baking powder
1/8 teaspoon salt
6 tablespoons chilled butter, cut into small pieces
1/2 cup half and half
preheat over to 350 degrees
to prepare filling, sprinkle brown sugar and cinnamon over peaches in a lightly coated 13 X 9-inch baking dish
to prepare topping, combine flour, sugar, corn starch, baking powder, and salt stirring well.
Cut butter into the flour mixture with a pastry blender, add half and half, gently knead dough until moistened.
Drop dough by spoonfuls evenly over top of filling.
Bake for 50 minutes
serve over ice cream and enjoy.
