Italian Cupboard Soup

Ingredients

  • 2 boneless top loin pork chops, cubed
  • 1 Tbsp. vegetable oil
  • 15 oz. can diced tomatoes, undrained
  • 2 14.5 oz. cans chicken broth
  • 2 Tbsp. dried minced onions
  • 15 oz. can northern beans
  • 8 oz. fresh spinach leaves, torn

    Directions

    1. Brown the pork in oil.



    2. Add all other ingredients and bring to a boil, except spinach. Lower heat and simmer 15 minutes.



    3. Stir in torn spinach and cook two minutes more.
