Spicy Fried Chicken

Ingredients

Breading

  • 2 Cups All Purpose Flour
  • 1 tsp Poultry Seasoning
  • 1 tsp Paprika
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tsp cayenne pepper
  • 1 tsp minced garlic

    Combine and Mix well

    Batter Mix

  • 2 Eggs beaten well
  • 1.5 cups Buttermilk
  • .5 cup cold water (34-38 degree F)
  • 1Tbsp cayenne pepper
  • 1 tsp salt
  • 2 tsp black pepper
  • 1Tbsp paprika

    Blend dry ingredients in separate bowl. Beat eggs well and add buttermilk and water then stir with whisk well. Add blended dry ingredients and stir well again.

    Directions

    Set up stove top skillet/frying pan or electric skillet with 100% pure vegetable oil ¼ inch deep and heat to 375 degrees F.

    Select 3 pounds of same cut chicken i.e. all thighs or all legs or all breasts etc. Take two pieces of chicken and place in breading (see breading recipe above), completely cover. Tap excess breading off and submerge in batter mix (see batter mix recipe above). Remove and re-bread.

    Place on holding plate. Repeat until all chicken has been breaded, battered, re-breaded and placed on holding plate. Lay into skillet 2 at a time. Repeat until all chicken is in the fryer. Cover. Fry for 10 minutes. Remove cover and turn each piece over. Re-cover and fry for another 10 minutes. Outside should be golden brown with an internal temp of 185 degrees F.

    Remove, drain, cool, and enjoy. Serve between 140 and 165 degrees F.
