Southern Delight® Mom’s Best Bourbon Balls
1 C. Pecan Pieces (small)
6 Tbsp Kentucky Bourbon
1 Stick Unsalted Butter
1 lb. Confectioners Sugar
1 6 oz. Bag Chocolate Chips
1 oz. Paraffin
Pecan Halves for top
Soak 1 C. Pecan Pieces in 6 Tbsp. Kentucky Bourbon for 2 hours or more. Cream butter with electric mixer , then add 1 lb Confectioners Sugar a little at a time until well blended. Add Bourbon soaked Pecans and Bourbon and blend until smooth. Chill for 2 hours or more unit very firm, then roll into 1” balls. Chill again for 1 hour or more.
Melt Chocolate and Paraffin in double boiler until smooth. Dip balls in chocolate and place on waxed paper, and top immediately with a pecan half (pressing down slightly). Store in covered container. Makes about 24 Bourbon Balls. Enjoy!
