1 12 oz. Bag Fresh Cranberries
2 Medium Oranges
2 C. Sugar
1 Large Box Raspberry Jell-O
2 C. Boiling Water
1 C. Cold Water
1 C. Pecan Pieces
Pour Raspberry Jell-O into medium-large bowl. Add 2 C. Boiling Water and stir until completely dissolved. Add 1 C. Cold Water and stir. Refrigerate until partially set (about 1-1 1/2 hours). Rinse and draining Cranberries and wash Oranges.
Cut Oranges into cubes similar to diced potatoes. Put about 1/2 of orange cubes into food processor bowl, then add 1/2 of the Cranberries and 1 C. Sugar. Pulse Processor until you achieve nearly a relish consistency, add 1/2 C. Pecan pieces and pulse once more. Add to semi-set Jell-O, and repeat with the remaining half of the Orange, Cranberries, Sugar and Pecans. Add to Jell-O. Stir to combine well, and refrigerate until firm—2-3 hours.
Great with turkey and dressing for Thanksgiving or Christmas dinner, or a great refreshing relish served with pork loin. Serves 20. Enjoy!
