Shrimp and Black Bean Tomato Salad

Ingredients

  • 1 oz. olive oil
  • 1/4 cup mixed red, green, and yellow peppers, diced; reserve 2 oz. for garnish
  • 1/4 cup red onion, diced; save 2 oz. for garnish
  • 3 cloves fresh garlic, minced
  • 1 Tbsp. chili powder
  • 1 Tbsp. ground cumin
  • Salt and pepper to your taste
  • 1/2 tsp. crushed red pepper flakes
  • 8 oz. peeled and de-veined shrimp
  • 8 oz. black beans
  • Handful of tortilla chips
  • 1 cup spring mix
  • 1 fresh tomato
  • 2 oz. sour cream
  • 2 oz. banana peppers

    Directions

    1. In preheated skillet add first eight ingredients and cook for one minute or until just tender.



    2. Add shrimp cook for approximately two minutes.



    3. Add black beans and cook until hot.



    4. Serve atop favorite salad greens and tortilla chips, sour cream, picante sauce, cheddar cheese and banana pepper rings.
