Slice eggplant in two, salt and grill to roast. Let cool. Puree in food processor. Add in everything else and mix by hand. Form into 2 in X 2 in cakes. Set aside.
Breading & Cooking
Take cakes and dredge in flour, then in eggs, then in bread crumbs. Sear in olive oil until golden brown. Put in oven for 2 to 4 minutes. Place on plate and top with roasted red pepper aioli, basil, and goat cheese.
