Papaya Lime Quinoa Salad (12 Servings)
2 cup of Quinoa
1 quart of water
1 tsp of salt
1 tsp of pepper
1 tsp of turmeric
½ cup of julienne carrots
1 red bell pepper, seeded and fine diced
1 whole tomato seeded and diced.
1 papaya (seeded and diced)
¼ cup of fresh mint diced
2 Tbs of chopped parsley
1 lime (zest and juice)
½ cup of crushed pineapple
Bring water to a boil. Add salt, pepper and turmeric to the water. Add quinoa and boil for 15 minutes.
Drain Quinoa in a fine mesh colander and add the carrots to the mixture while it is still hot. Pour onto a tray and spread thin to cool.
After cooling, add the remaining ingredients and mix well.
