Wild Bird and Nature Store Meatloaf Stuffed with Mashed Potatoes with Homemade Basil and Oregano Tomato Sauce

Ingredients

Meatloaf Stuffed with Mashed Potatoes

  • 1 1/4 lbs Ground Beef
  • 1 cup Corn Flakes (crushed)
  • 1/2 cup Chopped Onions
  • 1/2 cup Chopped Green Peppers
  • 1 tbl. Chopped Garlic
  • 1 tbl. Worcestershire Sauce
  • 1 egg
  • 1 lb. Mashed Potatoes

    Homemade Basil and Oregano Tomato Sauce

  • 8 large ripe tomatoes, peeled and crushed
  • 1 tomato chopped and diced
  • 1 tbl. Fresh Oregano
  • 1 tbl. Fresh Basil

    Directions

    Meatloaf Stuffed with Mashed Potatoes

    Mix Ground Beef, Corn Flakes, Green Peppers, Onions, Garlic, Worcestershire Sauce, and Egg in Mixing bowl, Mix together until you get all ingredients throughout the ground beef.

    Form into a loaf and place into a Pyrex baking dish coated with a non-stick cooking spray.

    Place into oven at 350 degrees for 1 hour or until thoroughly cooked.

    Take Meatloaf out of oven and cut horizontally.

    Place 1/2 to 1 inch layer of Mashed potatoes on bottom half of meatloaf, and then place the top of meatloaf back on over mashed potatoes. Cover the entire meatloaf with the Homemade basil and oregano tomato sauce. Place back into oven for 10 minutes.

    Homemade Basil and Oregano Tomato Sauce

    Mix tomatoes and herbs in medium sauce pan and place over medium heat. Cook down to a thick sauce.
