Black Bean Soup

Ingredients

1 T olive oil
1 small onion, finely chopped
2 garlic cloves, finely chopped
1 tsp chili powder
2 tsp ground cumin
2 cans-15 oz each black beans, rinsed and dried
1 can-14.5 oz low sodium diced tomatoes
1/4 cup fat free Greek Yogurt
1/2 tsp salt
1 medium avocado, pitted, peeled and finely chopped
lime wedges

Directions

In a large pot, heat the oil over medium-high heat. Add the onions nd cook until softened, about 5 minutes. Stir in the garlic, chili powder, and cumin and cook for 1 minute. Stir in the beans, tomatoes, 2 cups water, and the salt. Simmer over medium heat for 15 minutes.

Ladle soup into bowls and top with some of the yogurt, avocado, and a squeeze of lime.

Approx. 233 calories and 10 grams of fat per serving

To make a meal of this, serve soup over a helping of brown rice in a bowl.
