Cook 8 potatoes in skins, cool and peel. (Cook until fork tender)
Add to potatoes:
1 bunch chopped green onions
2-3 T butter
1 large container sour cream
1 cup grtaed sharp cheddar cheese
salt and pepper to taste
Put in greased casserole dish, dot with more butter, cover with 1 more cup of cheese and bake uncovered at 350 degrees for 35-40 minutes.
Can be made ahead and baked just before serving.
