1/4 pound bacon, diced
1 small sweet onion, chopped
1 pound green beans, ends trimmed and cut in half
3 tablespoons cider vinegar
3 tablespoons sugar
1/4 teaspoon each salt and pepper or to taste
Heat a large skillet over medium heat. Add the bacon and fry until crispy. Remove the bacon to a paper towel lined plate and spoon out all but 2 tablespoons of the bacon drippings. Strain and reserve the extra for another use.
Add the onion to the bacon drippings and cook until softened. Add the green beans with 1/4 cup water and cook until tender crispy, about 8-10 minutes. Add the sugar and the vinegar and stir well. Add the bacon back to the pans and cook for another minute or two.
Season with salt and pepper.
