Makes 6 servings
6 ripe peaches
3 tablespoons local honey
1/4 teaspoon kosher salt
Dash ground cayenne pepper
3 tablespoons toasted almond slivers
Whipped cream and fresh mint (for garnish)
Cut each peach in half from the top and remove the stone.
Heat a grill pan or outside grill to medium high heat. Brush the grates with a little olive oil to prevent sticking.
Combine the honey, salt and cayenne in a small bowl. Brush the cut side of each peach with a little of the honey and place onto the grill. Grill for 2-3 minutes and then turn the peach and grill on the skin side for an additional 3-4 minutes.
Place two halves on each dessert plate and drizzle with the honey. Put a blackberry into center of each of the peaches. Sprinkle each with 1/2 tablespoon of the toasted almonds and garnish with the whipped cream and fresh mint.
