Kentucky Proud Benedictine Tea Sandwhiches

Ingredients

1/2 Kentucky Proud English or Hot House cucumber, seeded
1 8 oz block cream cheese, softened
1 tbsp grated Kentucky Proud onion
Salt and pepper, to taste
Dash Kentucky Proud hot sauce
Thin sandwich bread, such as Pepperidge Farm Very Thin
1/2 Kentucky Proud English cucumber, thinly sliced

Directions

Grate the cucumber on a box grater and place the pulp in a paper towel-lined colander to drain excess liquid. Alternately, the pulp can be squeeze in a clean hand towel to remove the liquid. Place the cream cheese in the bowl of a stand mixer and whip in the cucumber pulp, grated onion, and season with salt, pepper, and hot sauce. Spread on thin white sandwich bread and top with thin slices of cucumber
