Kentucky Proud Chipotle Cabbage Slaw

1/2 cup lowfat sour cream
1/4 cup mayonnase
Zest and juice of 1/2 lime
1 tbsp Kentucky Proud cider vinegar
1 chipotle pepper in adobo sauce, minced (omit or use less for less spice)
1 tsp of adobo sauce, form the chipotle peppers above
1/2 head Kentucky Proud green cabbage, shredded
1/4 Kentucky Proud red onion, thinly sliced
1/4 cup Kentucky Proud cilantro, chopped
Salt and pepper, to taste


In a large mixing bowl, whisk together the sour cream, mayonnaise, lime zest and juice, vinegar, chipotle, and adobo. Add the cabbage, red onion, and cilantro and toss thoroughly. Season with salt and pepper, plus additional vinegar if needed.
