Bacon Glazed Turnips and Sweet Potatoes

Ingredients

8 slices bacon, cut into ½ inch pieces
½ onion, thinly sliced
2 garlic cloves, sliced
2 turnips, peeled and diced into ½ inch cubes
1 sweet potato, peeled and diced into ½ inch cubes
½ cup sliced scallions
2 tbsp red or white wine vinegar
Salt and pepper, to taste

Directions

Cook bacon in a large skillet until crispy and transfer to a separate plate. Add the onion and garlic to the bacon fat and saute for 5 minutes, until soft and starting to caramelize. Add the turnips and sweet potato, then add the scallions and vinegar. Add 2 tablespoons of water and cook until tender, about 15 minutes, adding additional water as needed. Continue to cook until the surfaces caramelize. Add the cooked bacon pieces back to the pan and season with salt and pepper.
