3 cups cold, leftover mashed potatoes
½ cup scallions
3 strips bacon, cooked and crumbled
½ cup grated cheese or ¼ cup pimento cheese or cheese spread (we used Dad’s Favorites)
Salt and pepper, to taste
Stir the cold mashed potatoes together with scallions, crumbled bacon, and cheese. The mixture should be quite stiff. Season to taste with salt and pepper. Heat a nonstick pan over medium heat and coat the bottom with olive oil. Dollop or pipe the potato mixture into rounds or tater tot-like shapes and fry on all sides until lightly browned and crisp. This works best when the mashed potatoes are cold, otherwise the puffs may start to fall apart.
