All Seasons Glazed Ham with Pineapple-Raisin Sauce
Ingredients:
1 unglazed, spiral-cut ham (4-9 lbs depending on servings needed)

Ingredients for Sauce & Glaze:
  • 2 cups dark brown sugar
  • 1/2 cup Dijon mustard
  • 3/4 tsp ground ginger
  • 1/2 tsp ground cloves
  • 4 cups fresh diced or crushed pineapple
  • 1/2 medium red onion
  • 1 cup dark raisins
  • 1 tsp cornstarch dissolved in 1 tbs water

    Garnish:
  • 1 can pineapple rings
  • 1 bottle of maraschino cherries
  • Whole cloves
  • Directions:
    Mix brown sugar, mustard, ginger and cloves in medium bowl. Transfer 1 cup of mixture to sauce pan (reserving remainder for glaze) add pineapple, onion and raisins to mixture and on medium heat bring to a simmer. Reduce heat to low and simmer until thickened.

    Using V-Rack and catch pan (filled with pineapple juice and water) for a smoker (or baking dish for a gas grill), cook ham according to instructions but no hotter than 350 degrees as this will dry out the ham. I like to use five pre-soaked hickory chunks on the ember of the Big Green Egg smoker to give the ham an extra smoky flavor. On a gas grill, you can use pre-soaked hickory chips either in a smoker box or aluminum foil placed directly onto the bricquet rack or smoker plate. Caution: be sure to keep chips away from meat as they will eventually produce a live flame.

    About 10 minutes prior to completion, baste ham with brown sugar mixture. I like to add pineapple rings secured to the outside of the with whole cloves with a maraschino cherry secured in the middle with a toothpick.

    Let stand for 15 minutes. While the ham is resting, return the pineapple mixture to a simmer and add the cornstarch/water mixture and stir until thickened. Serve ham with sauce, pineapple rings and cherries.
