Strawberry Fried Pies

Directions:
Filling
Combine ingredients in a saucepan. Bring mixture to a boil over medium heat. Cook stirring constantly until thickened, about 1-2 minutes. Cool completely before using. Dough 1/4 Cup mixture + 1 Tbs. milk makes 1 saucer sized pie crust. Add more milk if need to get proper consistency. Roll dough mixture on floured surface to 1/6 in thickness. Place a saucer on the rolled dough and cut around for desired shape. Spoon cooled filling onto center of dough and to about 1 inch of edge. Fold over and seal edges with a fork. If edges do not seal, moisten with water and try again. Be careful about using too much filling or it will bubble out. Heat cooking oil to about 350 degrees and fry about 1 minute on each side. Pies can also be baked for less grease content. Best when room temperature or slightly warm. Pies can be frozen for later use. |
