Alma Ray’s Portabella Chicken (for 4)
Ingredients:
  • 4 Boneless Skinless Chicken Breast
  • Fat Free Italian Dressing
  • 4 Large Portabella Mushroom Tops
  • 2-3 Slices cooked crisp bacon(crumbled)
  • 4 slices Provolone Cheese
  • Salt and Pepper to Taste

  • Directions:
    Marinate Chicken 1-3 hours in fat free Italian Dressing (just enough to cover chicken) Grill Marinated chicken over medium heat. Add salt and pepper to tast while grilling chicken. Once chicken is done or almost done place Portabella mushrooms on grill. Grill mushrooms over low to medium heat until they begin to soften. Once mushrooms are done turn mushrooms where the under side of mushroom is exposed. Place a chicken breast on top of each the mushrooms. Place crisp crumbled bacon on top of each of the chicken breast and top with a slice of provolone cheese. Heat on grill to melt cheese and serve hot.

    This is great with grilled asparagas or grilled zuccini.

    (also a great low carb dinner.)
