All Seasons Spinach Stuffed Chicken

Directions:
Make a horizontal pocket in each chicken breast half by cutting "ALMOST" through to the other side. Place chicken in a self-sealing plastic bag. Prepare marinade in a small bowl by mixing together mustard, oil, vinegar, oregano, basil and rosemary. Pour marinade over chicken while in bag. Seal the bag and refrigerate for 2-4 Hours turning bag occasionally.
**************************************** Prepare stuffing in a medium bowl combining Mozzarella Cheese,Spinach,Sweet Pepper,Black Pepper,and Garlic. **************************************** Remove chicken from resealable bag. Discard marinade. Spoon stuffing into pockets in chicken breast halves. Fasten with wooden toothpicks if necessary. **************************************** For charcoal grill,arrange medium hot coals around drip pan. Place chicken breast (bone side up) over drip pan. Cover grill for 45-55 minutes or until chicken is no longer pink, turning once halfway through grilling. **************************************** For gas grill users. Preheat grill.Reduce heat to medium and adjust for indirect cooking. Grill as above. |
