Bourbon Chicken Kabob
Ingredients:
  • 1 c Kentucky Bourbon
  • 1 c ketchup
  • 1/2 c brown sugar
  • 1 Tbsp minced garlic
  • 2 Tbsp ground ginger (I used a 1 to 1 1/2 inch piece of fresh ginger minced in a small chopper)
  • 3 large boneless skinless chicken breast halves
  • 2 large bell peppers
  • 2 good size onions

  • Directions:
    While the grill is heating up, mix first five ingredients and set aside.

    Cut chicken and vegetables into 1 1/2" to 2" pieces and thread on skewers (if using wood skewers, soak in water for 30 minutes).

    Place on grill over medium-high flames, baste with sauce each time you turn them.

    Close lid in between turns, approx 3-4 minutes per side. This can also be done on an indoor grill pan or without the skewers in a fry pan.
