Fruit Stuffed Pork Loin


1 pork tenderloin
1 bag dried mixed fruit
1/2 teaspoon rosemary
1/2 teaspoon thyme
1/2 teaspoon minced garlic
Small bay leaves


Cut wavy line in 1 pork tenderloin, but don’t cut through entirely.

Chop 1 bag dried mixed fruit and stuff as much as possible into meat.

Sprinkle 1/2 teaspoon each, rosemary, thyme, and minced garlic on top of meat.

Place 2 small bay leaves on each half of pork and sprinkle with salt and pepper to taste.

Put additional remaining fruit on top of pork and wrap tightly in aluminum foil.

Bake at 350 degrees for 1 1/2 hours, slice in 1/2” slices and serve with pork gravy.

or slice and serve on rolls to make sandwiches and serve with special sauce.
