Old Fashioned Sorghum Cake


2 tbsp butter, softened
1/4 cup sugar
1 egg
1/2 cup sorghum
1 cup self rising flour
1/4 tsp ground ginger
1/4 tsp cinnamon
1/2 cup hot water
Whipped cream


Cream the butter and sugar until crumbly. Mix in egg. Mix in molasses. Sift together flour, ginger and cinnamon. Add flour in batches, alternating with the water. Mix well after each addition. Pour into a 9x9 inch, sprayed baking dish. Bake at 350 for 25-30 minutes. May check with a toothpick. Top each serving with whipped cream or powdered sugar. Serves 9.
